One Bowl Vanilla Choc Chip Cookies

INGREDIENTS 

1/3 cup Wellgrove Keto Super Powder, Vanilla Flavour

1/3 cup chocolate chips

1/3 cup maple syrup

1/2 cup nut butter of choice

1/2 cup almond meal

1/2 cup coconut flour

2 tablespoons coconut sugar

1 egg or 1 flax-egg (1 tbs flaxseed meal with 3 tbs water)

1/4 teaspoon baking powder

1/4 teaspoon sea salt (optional)

 

METHOD

  1. Preheat oven 170C fan forced and line a tray with baking paper.
  2. In a medium bowl combine all the ingredients (except the choc chips) and mix until well blended. If needed use your hands to fold in and combine well. Fold in the choc chips at the end.
  3. With a small cookie scoop, portion the dough, place onto baking tray and using a fork slightly flatten. Alternatively, grab a tablespoon amount, roll with your hands into a ball and using a fork slightly flatten.
  4. Bake for 10-12 minutes. Allow to cool on tray before storing or enjoy warm.

 

Note: The consistency of the dough may vary depending on the brand or type of nut butter you use. It should be slightly firm and wet and not very crumbly.
