Keto Vanilla Porridge

Makes 1 serve

Keto, dairy free, gluten free, vegan



1.5 cups cauliflower ‘rice’ or ½ head cauliflower

1 cup (canned) coconut milk

2 tbls almond meal

¼ tsp cinnamon

1 scoop Wellgrove Vanilla Keto Super Powder

Toppings (optional) - berries, nuts, tahini



  1. Remove the hard stems from the head of cauliflower and either grate it using a box grater or chop it and pulse it in a food processor to form rice-sized pieces.
  2. Heat cauliflower rice, coconut milk, almond meal and cinnamon in a small saucepan over medium heat. Simmer for 15 minutes until creamy and cauliflower softened.
  3. Remove from heat. Stir through Wellgrove Vanilla Keto Powder.
  4. Serve in a bowl and top with toppings of your choice.

Note: Delicious served warm or cold (similar to a rice pudding) for breakfast or dessert.
