2 cups tomato, diced (cherry, roma, or mixed)
¼ red onion, finely diced
6 marinated artichoke hearts, diced
¼ cup fresh basil leaves, chopped
1 teaspoon capers (optional)
1 tablespoon balsamic vinegar
2 tablespoons Extra Virgin Olive Oil
2 capsules Wellgrove Heart Health Extra Strength Olive Leaf Extract
Sea salt & pepper, to taste
- Place tomato, red onion, artichoke, basil and capers in a mixing bowl.
- In a small bowl or mixing jug, place balsamic, Extra Virgin Olive Oil, and salt and pepper.
- Break open Wellgrove Heart Health capsules and add in. Whisk to combine.
- Pour over the tomato mixture and toss to combine.
- Serve on top of sliced fresh or toasted multigrain sourdough bread or over grilled fish.
